PERFECT PEA PUREE ON OLIVE BREAD CROSTINI

Ingredients

150g frozen Peas
40mL thickened Cream
40g unsalted Butter
1Tsp Italian Herbs
4 Slices of Olive Pane Di Casa
2 Tbsp Chèvre Goats Cheese
½ Pack of Cherry Tomatoes halved
Rocket and Olive Oil to Garnish

 

Method

  1. Place frozen peas, cream, butter and Italian herbs into a small saucepan on medium heat until cream bubbles and peas are bright green
  2. Puree with a stick blender
  3. Slice and halve olive pane di casa to you preferred thickness
  4. Toast under a grill
  5. Serve a dollop of pea puree on pane di casa
  6. Top with goats cheese and halved cherry tomatoes, rocket and a drizzle of olive oil
